Instructions:
Prep potatoes:
Peel and cut into thick cylinders (2–3 inches tall).
Soak briefly in water to remove excess starch, then pat dry.
Sear:
In a skillet, melt butter and brown the flat sides of the potatoes until golden (about 5 minutes per side).
Add flavor & roast:
Add garlic, thyme, and about 1 cup of stock.
Cover loosely with foil and transfer to oven (same 200°C/390°F) for 30–40 minutes until tender and creamy inside.
