🧀 Cheesy Stuffed Potato Patties: Crispy, Melty, and Irresistible!

Boil the potatoes until soft, then drain and mash them in a large bowl. Let them cool slightly.
In a small bowl, mix the shredded cheese with 1 tablespoon of breadcrumbs. This will help keep the cheese from melting out completely when you fry the patties.
Take a small portion of the mashed potatoes and flatten it in your hand to form a small disk.
Place a teaspoon of the cheese mixture in the center and fold the edges of the potato over to seal the cheese inside.
Shape the filled potato into a smooth, round patty.
Repeat for the remaining mixture.
In a shallow bowl, whisk the egg, and in another shallow bowl, add the remaining breadcrumbs, salt, pepper, and garlic powder.
Dip each potato patty first into the egg, then coat it in the seasoned breadcrumbs.
Heat the vegetable oil in a large frying pan over medium heat.
Fry the patties in batches for 3–4 minutes per side, or until golden and crispy on the outside.
Place the patties on a paper towel-lined plate to drain any excess oil.
Garnish with chopped fresh parsley, if desired.
