In a medium-sized bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
In a separate bowl, whisk the eggs, milk, vanilla extract, and melted butter until combined.
Add the wet ingredients to the dry ingredients and stir until just combined (don’t overmix). Gently fold in the chopped apple.
Heat about 2-3 inches of vegetable oil in a deep skillet or Dutch oven over medium heat. The oil should reach about 350°F (175°C). You can check the temperature with a thermometer or drop a small piece of dough in the oil—if it sizzles immediately, it’s ready.
Using a spoon or small ice cream scoop, drop spoonfuls of the batter into the hot oil. Fry the donuts in batches, making sure not to overcrowd the pan. Cook for 2-3 minutes per side, or until golden brown and crispy on the outside.
Remove the donuts from the oil and place them on a paper towel-lined plate to drain excess oil.
In a small bowl, mix the sugar and cinnamon for the coating.
While the donuts are still warm, toss them in the cinnamon sugar mixture, making sure they’re evenly coated.

For extra flavor, you can add a bit of apple cider to the batter instead of milk.
If you prefer baked donuts, you can use a donut pan and bake them at 375°F (190°C) for 12-15 minutes.
