Make the dough:
In a bowl, mix warm water, sugar, and yeast. Let it sit 5–10 minutes until foamy.
Add flour and salt, then mix until a soft dough forms. Knead for 5–7 minutes until smooth.
Cover and let rise for about 1 hour, or until doubled in size.
Shape & fill:
Divide dough into two equal pieces.
Roll or stretch one piece into a round (pan-sized).
Place it in a lightly oiled non-stick skillet.
Spread cheese evenly on top, avoiding the edges.
Place the second dough piece on top and pinch the edges to seal.
Cook in a pan:
Cover and cook over low-medium heat for about 6–8 minutes per side, until golden brown and puffed.
Flip carefully using a plate or spatula.
Finish & serve:
Brush with olive oil or melted butter.
Sprinkle with herbs or extra cheese (optional).
Slice and enjoy warm and melty!
