Steps:

  1. Make the dough:

    • In a bowl, mix warm water, sugar, and yeast. Let it sit 5–10 minutes until foamy.

    • Add flour and salt, then mix until a soft dough forms. Knead for 5–7 minutes until smooth.

    • Cover and let rise for about 1 hour, or until doubled in size.

  2. Shape & fill:

    • Divide dough into two equal pieces.

    • Roll or stretch one piece into a round (pan-sized).

    • Place it in a lightly oiled non-stick skillet.

    • Spread cheese evenly on top, avoiding the edges.

    • Place the second dough piece on top and pinch the edges to seal.

  3. Cook in a pan:

    • Cover and cook over low-medium heat for about 6–8 minutes per side, until golden brown and puffed.

    • Flip carefully using a plate or spatula.

  4. Finish & serve:

    • Brush with olive oil or melted butter.

    • Sprinkle with herbs or extra cheese (optional).

    • Slice and enjoy warm and melty!
