Preheat the Oven: Set your oven to 425°F (220°C). You want it nice and hot to get that crispy texture.
Prep the Potatoes: Wash the potatoes thoroughly and cut them into thin, even sticks. You can peel them if you like, but keeping the skin on adds a nice texture and flavor. Try to cut them uniformly so they cook evenly.
Soak the Potatoes: Place the cut potato sticks in a bowl of cold water and let them soak for about 30 minutes. This helps remove excess starch, leading to crispier fries. Drain and pat them dry with a towel.
Toss with Oil & Seasoning: In a large bowl, toss the potato sticks with olive oil, garlic powder, paprika, salt, and pepper. Make sure all the sticks are coated evenly.
Bake: Spread the potato sticks out in a single layer on a baking sheet lined with parchment paper. Avoid overcrowding them to ensure they crisp up. Bake for 25-30 minutes, flipping halfway through, until they’re golden and crispy.
Serve: Once done, let them cool for a few minutes. You can sprinkle some fresh herbs or grated Parmesan on top for an extra touch.
Serve them with a dip like ketchup, aioli, or even a tangy sour cream dip.
For extra crispiness, you can coat the sticks in a little bit of cornstarch or flour before tossing them in oil and seasoning.
