Prep the chickpeas:
Preheat your oven to 400°F (200°C).
If you’re using canned chickpeas, drain and rinse them thoroughly. If you’re using cooked chickpeas, make sure they’re well-drained and dry.
Spread the chickpeas out on a clean kitchen towel or paper towels and pat them dry as much as possible. The drier they are, the crunchier the chips will be.
Season the chickpeas:
Once the chickpeas are dry, transfer them to a mixing bowl. Drizzle with olive oil and toss to coat evenly.
Add the salt, smoked paprika, garlic powder, cumin (if using), black pepper, and nutritional yeast (if using). Toss again until the chickpeas are well-coated in the spices.
Bake the chickpeas:
Spread the seasoned chickpeas in an even layer on a baking sheet. Make sure they’re in a single layer to get even crispiness. You can line the sheet with parchment paper for easier cleanup, but it’s optional.
Bake in the preheated oven for 25-30 minutes, stirring halfway through, until they’re golden brown and crunchy. Keep an eye on them towards the end to avoid burning.
Cool and enjoy:
Once the chickpeas are crisp, remove them from the oven and let them cool on the baking sheet for 5 minutes. They will crisp up even more as they cool.
Enjoy them as a snack on their own, or use them to top salads, soups, or grain bowls for a satisfying crunch!
Curry-flavored chips: Add 1 tablespoon of curry powder to the seasoning mix for a vibrant, aromatic flavor.
Chili lime: After baking, squeeze fresh lime juice over the chips and sprinkle with chili powder or cayenne pepper for a tangy, spicy kick.
Ranch-flavored: Toss with a ranch seasoning mix or create your own with dried dill, onion powder, garlic powder, and a bit of salt.
Store your crunchy chickpea chips in an airtight container at room temperature for up to 3-4 days. They are best eaten fresh, but they should stay crunchy for a couple of days.
