Instructions:

  1. Prep the chickpeas:

    • Preheat your oven to 400°F (200°C).

    • If you’re using canned chickpeas, drain and rinse them thoroughly. If you’re using cooked chickpeas, make sure they’re well-drained and dry.

    • Spread the chickpeas out on a clean kitchen towel or paper towels and pat them dry as much as possible. The drier they are, the crunchier the chips will be.

  2. Season the chickpeas:

    • Once the chickpeas are dry, transfer them to a mixing bowl. Drizzle with olive oil and toss to coat evenly.

    • Add the salt, smoked paprika, garlic powder, cumin (if using), black pepper, and nutritional yeast (if using). Toss again until the chickpeas are well-coated in the spices.

  3. Bake the chickpeas:

    • Spread the seasoned chickpeas in an even layer on a baking sheet. Make sure they’re in a single layer to get even crispiness. You can line the sheet with parchment paper for easier cleanup, but it’s optional.

    • Bake in the preheated oven for 25-30 minutes, stirring halfway through, until they’re golden brown and crunchy. Keep an eye on them towards the end to avoid burning.

  4. Cool and enjoy:

    • Once the chickpeas are crisp, remove them from the oven and let them cool on the baking sheet for 5 minutes. They will crisp up even more as they cool.

    • Enjoy them as a snack on their own, or use them to top salads, soups, or grain bowls for a satisfying crunch!
