Preheat your oven to 375°F (190°C).
Slice the apples into thin, even slices (about 1/8-inch thick). If you have a mandolin slicer, this is the perfect time to use it for uniform slices.
Place the apple slices in a bowl of water with 2 tablespoons of lemon juice to prevent browning. Microwave the apple slices for about 1-2 minutes until they are softened and pliable, but not mushy. Drain them and pat them dry.
Roll out the puff pastry on a floured surface. If using store-bought, you can often find it already rolled out to a rectangular shape.
Cut the puff pastry sheet into 6 equal strips (about 1.5 inches wide). You can also cut the pastry into fewer strips if you want larger roses.
Sprinkle the puff pastry strips with cinnamon and sugar (optional for a little extra flavor).
Arrange the apple slices along the top edge of each puff pastry strip, overlapping them slightly to create the look of rose petals.
Start rolling the pastry from one end, carefully rolling it into a spiral, with the apple slices showing on the outside. The more you overlap the slices, the more petal-like the roses will look.
Place the apple roses into a muffin tin (this will help them keep their shape as they bake).
Bake in the preheated oven for 30-35 minutes, or until the puff pastry is golden and crispy and the apples are tender.
While the roses are baking, melt the apricot jam (or honey) in the microwave for 20-30 seconds, then strain it to remove any chunks.
Once the roses are done baking, brush the warm glaze over the apples for a beautiful shine.
Optional: Dust with powdered sugar for an extra touch of elegance.

For a twist, you can also sprinkle the puff pastry with a little bit of brown sugar or add a small amount of almond paste before rolling.
