Instructions:

  1. Preheat the oven:
    Preheat your oven to 375°F (190°C). Grease a muffin pan or line it with paper liners.

  2. Prepare the vegetables:
    Grate the zucchini and squeeze out any excess moisture using a clean dish towel. Grate the carrots, and chop the bell peppers and green onions.

  3. Mix dry ingredients:
    In a large bowl, whisk together the flour, baking powder, salt, black pepper, and garlic powder (if using).

  4. Combine wet ingredients:
    In a separate bowl, whisk together the eggs, milk, and melted butter or olive oil.

  5. Combine everything:
    Add the wet mixture to the dry ingredients and stir until just combined. Gently fold in the zucchini, carrots, bell peppers, green onions, and shredded cheese.

  6. Fill the muffin tins:
    Spoon the batter into the prepared muffin
