Instructions:
Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper to prevent sticking.
In a large bowl, whisk together the flour, baking powder, baking soda, salt, sugar, and garlic powder if using.
Fold in the shredded cheddar cheese, ensuring it’s evenly mixed throughout the dry ingredients.
In another bowl, whisk the buttermilk, melted butter, and eggs until smooth and combined.
Add the wet mixture to the dry ingredients and stir gently until just combined. It’s okay if the batter is slightly lumpy. If desired, fold in dried herbs at this stage.
Pour the batter into the prepared loaf pan, spreading it out evenly. Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
Let the bread rest in the pan for 10 minutes before transferring it to a wire rack to cool completely. Slice and serve warm or at room temperature.
