Cut potatoes into thin strips and soak in cold water for at least 1 hour (removes starch).

Dry well, then fry at 325°F (160°C) for 3–4 minutes. Remove and let cool.

Fry again at 375°F (190°C) until golden and crisp.

Drain and salt immediately.
