Instructions:
In a small bowl, combine the warm water, sugar, and active dry yeast. Let it sit for about 5 minutes, or until the mixture becomes frothy.
In a large mixing bowl, combine the flour and salt. Pour in the melted butter and the yeast mixture. Stir until a dough forms.
Turn the dough out onto a lightly floured surface and knead for about 5 minutes, or until the dough is smooth and elastic.
Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour, or until it doubles in size.
Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper.
Punch down the risen dough and divide it into 8 equal pieces. Flatten each piece into a rectangle and place a cube of mozzarella cheese in the center.
Fold the dough over the cheese and pinch the edges to seal, forming a ball.
In a large pot, bring the 10 cups of water and baking soda to a boil.
Carefully drop the pretzels, one or two at a time, into the boiling water. Boil for about 30 seconds, then remove with a slotted spoon and place them on the prepared baking sheet.
Sprinkle the boiled pretzels with coarse salt and make a small slit on the top of each pretzel.
Bake in the preheated oven for 12-15 minutes, or until the pretzels are golden brown.
Remove from the oven and brush the tops of the pretzels with melted butter.
Let the pretzels cool slightly before serving.
