- Preheat your oven to 400°F (200°C).
- Line a baking sheet with parchment paper or lightly grease it with oil.
- Wash the potatoes thoroughly (you can leave the skin on for extra crispiness).
- Cut the potatoes into wedges: Slice each potato in half lengthwise, then cut each half into 3-4 wedges, depending on the size of the potato.
- In a large mixing bowl, combine olive oil, minced garlic, garlic powder, paprika, oregano, salt, and pepper. Mix well.
- Add the potato wedges to the bowl and toss until they are evenly coated with the seasoned oil mixture.
- Arrange the potato wedges in a single layer on the prepared baking sheet, making sure they are not overlapping.
- Bake in the preheated oven for 35-40 minutes, flipping halfway through, until they are golden brown and crispy on the outside and tender on the inside.
- Once the wedges are baked, remove them from the oven and sprinkle the grated Parmesan cheese over the top. Toss the wedges gently so the cheese sticks to the hot potatoes.
- Return the tray to the oven for an additional 5 minutes to let the cheese melt and crisp up slightly.
- Remove from the oven and garnish with freshly chopped parsley if desired.
- Serve hot with your favorite dipping sauce (like ketchup, garlic aioli, or sour cream).
