Procedure:
Prepare Portobello Mushrooms:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Clean the portobello mushroom caps with a damp cloth or paper towel to remove any dirt. Remove the stems and gently scrape out the gills using a spoon.
Season and Bake:
Brush both sides of the mushroom caps with olive oil and sprinkle with salt and pepper.
Place the mushroom caps, gill side down, on the prepared baking sheet. Bake in the preheated oven for about 10 minutes to soften them slightly.
Assemble the Pizzas:
Remove the mushroom caps from the oven and flip them over so the gill side is facing up.
Spoon marinara sauce onto each mushroom cap, spreading it evenly.
Sprinkle shredded mozzarella cheese and grated Parmesan cheese over the sauce.
Sprinkle dried oregano over the cheese.
Bake Again:
Return the baking sheet to the oven and bake for another 10-12 minutes, or until the cheese is melted and bubbly and the mushrooms are tender.
Serve:
Remove from the oven and let cool slightly before serving. Garnish with chopped fresh basil leaves if desired.
