2 tbsp lemon juice

ΒΌ cup crumbled feta cheese

2 tbsp chopped fresh basil or parsley

β Step 1: Roast the Vegetables

Preheat oven to 200Β°C (400Β°F).

Spread eggplant, zucchini, pepper, onion, and tomatoes on a baking tray.

Drizzle with olive oil, sprinkle oregano, salt, and pepper.

Roast for 20β25 minutes, stirring halfway, until tender and slightly caramelized.

While vegetables roast, cook pasta according to package directions.

Drain and set aside, reserving Β½ cup of the pasta water.
