1 can (15 oz) chickpeas, drained & rinsed

1 cup cherry tomatoes, halved

β Step 1: Prep the Veggies
Chop all vegetables into bite-sized pieces and place them in a large salad bowl.
β Step 2: Make the Dressing
In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, garlic, oregano, salt, and pepper until smooth and emulsified.

Add chickpeas, tomatoes, cucumber, onion, bell pepper, olives, and feta to the bowl.
Drizzle dressing over the top and toss gently to combine.
