Mediterranean Olive Oil Raisin Cookies
Ingredients
2 cups all-purpose flour
1/2 tsp baking soda
1/4 tsp salt
1/2 cup extra virgin olive oil
1/2 cup brown sugar
1/4 cup honey
1 large egg
1 tsp vanilla extract
1 tsp orange zest (freshly grated)
1/2 tsp ground cinnamon
1 cup raisins (you can mix with chopped dates or figs if you like)
1/2 cup chopped walnuts or almonds (optional)
Instructions
Preheat the Oven
Set your oven to 350°F (175°C) and line a baking tray with parchment paper.
Mix Dry Ingredients
In a bowl, whisk together flour, baking soda, salt, and cinnamon. Set aside.
Blend Wet Ingredients
In another bowl, combine olive oil, brown sugar, honey, egg, vanilla extract, and orange zest. Mix until smooth and creamy.
Combine Mixtures
Gradually add the dry ingredients into the wet mixture. Stir until a soft dough forms.
Add Raisins and Nuts
Fold in raisins and nuts (if using). The dough will be slightly sticky—this gives the cookies their chewy Mediterranean texture.
Shape and Bake
Drop spoonfuls of dough onto the prepared baking tray. Flatten them slightly with the back of a spoon.
Bake for 10–12 minutes, or until the edges are golden brown.
Cool and Serve
Let the cookies rest on the tray for 5 minutes, then transfer to a cooling rack. Enjoy warm or at room temperature.
Serving Tip
Serve with a small glass of sweet mint tea or Greek coffee. These cookies also pair beautifully with a drizzle of honey or a scoop of vanilla gelato.
