  • 1 large eggplant (or 2 small), sliced into ½-inch thick rounds

  • Salt (for sweating the eggplant)

  • 2 eggs, beaten

  • ½ cup all-purpose flour

  • 1 cup breadcrumbs (regular or panko for extra crunch)

  • ½ cup grated parmesan (optional, for extra flavor)

  • 1 tsp garlic powder

  • 1 tsp dried oregano or Italian herbs

  • Oil for pan-frying (olive or vegetable)
