Preheat your oven to 350°F (175°C).
Grease a 9-inch round cake pan or springform pan. Line the bottom with parchment paper for easy removal.
Peel, core, and slice the apples into thin wedges.
In a small saucepan, melt 3 tablespoons of butter over medium heat. Stir in the brown sugar, cinnamon, and nutmeg.
Pour this caramel mixture into the bottom of the cake pan, then arrange the apple slices in a circular pattern over the caramel. Set aside.
In a bowl, whisk together flour, baking powder, and salt.
In a separate bowl, beat the eggs and sugar until light and fluffy (about 2–3 minutes).
Add melted butter, milk, and vanilla extract to the egg mixture and stir well.
Gradually add the dry ingredients to the wet mixture and mix until just combined — don’t overmix.
Pour the cake batter gently over the apples, spreading it evenly with a spatula.
Bake for 35–40 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.
Let the cake cool in the pan for 10–15 minutes.
Run a knife around the edges, then carefully invert the cake onto a serving plate. Remove the parchment paper and admire the glossy, caramelized apple top!
