Prep chicken:
Season chicken pieces with salt, pepper, garlic powder, and paprika. Set aside.
Make batter:
In a bowl, mix flour, cornstarch, baking powder, and salt. Whisk in egg and sparkling water until you get a thick, smooth batter. Don’t overmix.
Heat oil:
Heat 2–3 inches of oil in a deep pan to 350°F (175°C).
Batter & fry:
Dip chicken pieces in the batter, let excess drip off slightly, then carefully lower into the hot oil. Fry in batches for 4–6 minutes, turning occasionally, until golden brown and cooked through.
Drain & serve:
Transfer to a paper towel-lined plate. Let rest for 2–3 minutes to keep crispy.
Serve with lemon wedges, spicy mayo, or classic dipping sauces.
Great with fries, coleslaw, or in a sandwich.
