In a large bowl, mix flour, yeast, sugar, and salt.
Add warm water and 2 tbsp olive oil. Stir until a soft dough forms.
Knead on a floured surface for 5 minutes (or use a mixer with a dough hook).
Cover and let rise in a warm spot for 30–45 minutes, or until doubled.
Preheat oven to 400°F (200°C).
Divide dough into 6–8 equal balls. Flatten each into a small round (about 4 inches wide).
Place on a parchment-lined baking tray.
Dimple each focaccia with your fingers.
Drizzle with olive oil, then add toppings: press in tomatoes, sprinkle rosemary, olives, cheese, etc.
Bake for 12–15 minutes until puffed and golden.
