⏱️ Quick Instructions:

1. Make the Dough:

  1. In a large bowl, mix flour, yeast, sugar, and salt.

  2. Add warm water and 2 tbsp olive oil. Stir until a soft dough forms.

  3. Knead on a floured surface for 5 minutes (or use a mixer with a dough hook).

  4. Cover and let rise in a warm spot for 30–45 minutes, or until doubled.

2. Shape the Minis:

  1. Preheat oven to 400°F (200°C).

  2. Divide dough into 6–8 equal balls. Flatten each into a small round (about 4 inches wide).

  3. Place on a parchment-lined baking tray.

3. Top & Bake:

  1. Dimple each focaccia with your fingers.

  2. Drizzle with olive oil, then add toppings: press in tomatoes, sprinkle rosemary, olives, cheese, etc.

  3. Bake for 12–15 minutes until puffed and golden.
