Choose your fillings: if using meat, shred or chop it into bite-sized pieces. Sauté any vegetables you want to use in a pan with a little olive oil or butter until soft. You can also use pre-cooked veggies or leftovers for even faster prep.
Lay a tortilla flat on a clean surface. Add a spoonful of shredded cheese and your chosen fillings (meat, veggies, etc.) in the center. Be careful not to overstuff!
Fold the tortilla in half to form a half-moon shape, pressing down gently to seal the edges.
Heat a non-stick skillet over medium heat and lightly brush it with olive oil or melted butter.
Place the stuffed tortillas in the skillet, cooking for 2-3 minutes on each side or until golden brown and crispy. You may need to press them down gently with a spatula to ensure they cook evenly.
If using pita or flatbread, you can also bake them in the oven at 375°F (190°C) for 5–8 minutes.
Remove from the pan and cut in half if desired. Serve with your favorite dipping sauces like salsa, ranch, or guacamole.
