Preheat oven to 350°F (175°C).
Make the crust:
In a medium bowl, mix the graham cracker crumbs and sugar.
Add melted butter and mix until it resembles wet sand.
Press into the bottom and sides of a 9-inch pie dish.
Bake for 8 minutes, then let it cool slightly.
Prepare the filling:
In a large bowl, whisk melted butter with both sugars until smooth.
Add eggs and vanilla, whisking until well combined.
Stir in flour and salt until just combined.
Fold in chocolate chips.
Pour filling into pre-baked crust.
Make the crumble topping:
In a bowl, combine flour and sugars.
Cut in cold butter using a fork or pastry cutter until mixture forms coarse crumbs.
Stir in chocolate chips.
Sprinkle crumble evenly over the filling.
Bake the pie:
Bake for 35–40 minutes, until the center is set and the topping is golden.
If the edges of the crust brown too quickly, cover them with foil halfway through baking.
Cool & serve:
Let the pie cool for at least 1 hour before slicing.
Serve warm with vanilla ice cream or whipped cream, if desired.
