In a bowl, whisk together the flour, baking powder, sugar, and salt.
In another bowl, whisk the egg, milk, vanilla, and melted butter.
Pour the wet ingredients into the dry ingredients and stir until just combined. The batter should be thick but spoonable — add a splash more milk if needed.
In a deep pan or skillet, heat about 1–2 inches of oil to 350°F (175°C). Test by dropping in a small bit of batter — it should sizzle and rise to the surface.
Drop spoonfuls of batter into the hot oil, frying 4–5 at a time. Avoid overcrowding.
Fry each side for about 2–3 minutes, or until puffed up and golden brown.
Use a slotted spoon to remove the fritters and drain them on paper towels.
While still warm, drizzle generously with honey.
Optionally, dust with powdered sugar for extra sweetness.
