Instructions:

  1. Preheat Oven:

    • Set oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.

  2. Prepare Potatoes:

    • In a bowl, toss potato slices with 1 tablespoon olive oil, garlic powder, rosemary, salt, and pepper.

    • Spread evenly on one half of the baking sheet. Bake for 15 minutes.

  3. Add Salmon:

    • Rub salmon fillets with remaining olive oil, salt, pepper, and a squeeze of lemon.

    • Place on the other half of the baking sheet, skin side down if applicable.

    • Top with lemon slices.

  4. Bake Together:

    • Return the tray to the oven and bake for 12–15 minutes, until salmon is flaky and potatoes are golden and tender.

  5. Serve:

    • Garnish with chopped parsley and an extra lemon wedge.
