🔪 Instructions:

  1. Prep the Potatoes:

    • Peel the potatoes and slice into thick rectangular slabs (about ½–¾ inch thick).

    • Place a potato slice flat on a cutting board. Lay two chopsticks or skewers alongside to prevent cutting all the way through.

    • Make vertical cuts across the top (about ⅛–¼ inch apart).

    • Flip the potato and make diagonal cuts across the opposite side — this creates the accordion pattern.

  2. Soak (Optional but Recommended):

    • Soak the cut potatoes in cold water for 20–30 minutes to remove excess starch. Pat dry thoroughly.

  3. Season:

    • In a bowl, mix melted butter, garlic, herbs, paprika, salt, and pepper.

    • Brush the mixture generously over both sides of the potatoes, making sure it gets into the cuts.

  4. Bake:

    • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

    • Bake potatoes for 35–45 minutes, flipping halfway through, until golden, crisp, and accordion folds open up.

  5. Finish & Serve:

    • Sprinkle with Parmesan and parsley before serving, if desired.
