Trim the crusts off the bread slices to create clean edges. You can either use a knife or a bread trimmer.
Gently flatten each slice of bread with a rolling pin to make them thinner and easier to roll up.
In a small bowl, mix the cream cheese and mayonnaise (if using) to create a smooth spread. You can also add a little Dijon mustard for extra flavor.
Season the spread with a pinch of salt and pepper to taste.
Spread a thin layer of the cream cheese mixture onto each slice of bread.
Layer the deli meats (ham, turkey, or chicken) on top of the spread.
Add a few fresh spinach leaves (or lettuce) on top of the meat for crunch and freshness.
Optionally, sprinkle with shredded mozzarella cheese for extra creaminess.
Carefully roll each slice of bread tightly into a cylinder, starting from one edge. Press down gently to seal the roll.
Slice the rolled bread into bite-sized pieces (about 1 ½ to 2 inches long) and arrange them on a platter.
Garnish with a few pickles, olives, or fresh herbs for extra flair, or drizzle with a little balsamic glaze.
Serve the Tramezzini rolls as a party appetizer, snack, or light lunch.
Pair with a refreshing drink like iced tea, lemonade, or sparkling water.
Add a side of chips or a small salad for a more complete meal.
