Instructions

1. Cook the Broccoli
Bring a large pot of salted water to a boil. Add the broccoli and cook for about 5 minutes until just tender. Drain well and pat dry with paper towels.

2. Chop the Broccoli
Finely chop the cooked broccoli until it resembles coarse crumbs.

3. Mix the Ingredients
In a large bowl, combine the chopped broccoli, egg, onion, parsley, breadcrumbs, cheddar cheese, salt, and pepper. Mix until everything is well combined and holds together.

4. Shape the Croquettes
Form the mixture into small croquette shapes or patties using your hands.

5. Bake
Place the croquettes on a parchment-lined baking sheet. Bake in a preheated oven at 180°C (350°F) for about 15 minutes, or until golden and slightly crispy.

Tip:
For extra crispiness, spray the croquettes lightly with olive oil before baking—or air fry them for an even lighter version.
