Ingredients:
1½ pounds zucchini (approximately 3 cups), grated
1½ cups cooked shredded rotisserie chicken
¾ cup shredded mozzarella cheese
⅔ cup corn kernels (fresh, frozen, or roasted)
½ cup freshly grated Parmesan cheese
¼ cup all-purpose flour
1 large egg, beaten
3 tablespoons chopped fresh chives
1 tablespoon lemon zest
2 cloves garlic, minced
Kosher salt and freshly ground black pepper, to taste
¼ cup vegetable oil (for frying)
For the sour cream sauce:
¾ cup sour cream
2 tablespoons chopped fresh chives
1 tablespoon freshly squeezed lemon juice
1 clove garlic, grated
Kosher salt and freshly ground black pepper, to taste
