Instructions:

  1. Heat oil: In a deep pan or pot, heat about 2 inches of oil to 350°F (175°C).

  2. Mix dry ingredients: In a bowl, whisk together flour, cornstarch, baking powder, sugar (if using), and salt.

  3. Whisk wet ingredients: In a separate bowl, combine milk, yogurt, egg yolk, and vanilla. Add to dry ingredients and stir until smooth.

  4. Whip egg white: Beat the egg white to stiff peaks. Gently fold it into the batter—this is what gives them their cloud-like texture.

  5. Add fruit (optional): Fold in any fruit or flavorings now.

  6. Fry: Drop heaping spoonfuls of batter into the hot oil. Don’t crowd the pan. Fry 2–3 minutes per side until golden and puffed.

  7. Drain & dust: Remove with a slotted spoon, drain on paper towels. Dust with powdered sugar or glaze if desired.
