Step 1: Make the Dough
In a large bowl, mix the warm milk, yeast, and sugar. Let it sit for a few minutes until foamy. Add the eggs and sunflower oil, and mix well.
Step 2: Combine Dry Ingredients
Add flour and salt to the wet mixture. Mix until a soft dough forms. Knead by hand or with a dough hook for about 10 minutes until smooth.
Step 3: First Rise
Brush the dough lightly with oil, cover with foil or a clean towel, and let it rise for 3 hours in a warm spot.
Step 4: Shape the Dough
Sprinkle flour on a clean surface. Turn out the dough, knead briefly, and shape it into a rectangle. Divide into equal portions.
Step 5: Form the Buns
Shape each portion into a smooth ball and place on a parchment-lined baking sheet. Let them rise for another 30 minutes.
While the Dough Rises – Make the Cream
Step 6: Prepare the Cream Filling
In a pot over medium heat, whisk together milk, egg, sugar, vanilla sugar, cornstarch, and flour. Stir continuously until thickened. Remove from heat and stir in the butter until smooth. Let cool slightly, then transfer to a piping bag.
Step 7: Fill and Bake
Gently flatten each brioche bun with your hand. Pipe the cream in a swirl pattern onto each bun. Brush edges with beaten egg yolk.
Bake in a preheated oven at 200°C (400°F) for 30 minutes, or until golden brown.
Step 8: Cool and Serve
Let the brioches cool. Dust with powdered sugar and enjoy!
