Easter Potato Nests With Hard Boiled Eggs

🥔 Ingredients:

For the Potato Nests:

• 3 medium potatoes (such as Russet or Yukon Gold)

• 1 egg

• 15g (1 tbsp) all-purpose flour

• Salt and pepper, to taste​

For the Yogurt Filling:

• 120g (½ cup) plain yogurt (Greek yogurt recommended for its thickness)

• 1 garlic clove, minced

• Zest of ½ lemon

• 15ml (1 tbsp) olive oil

• Fresh parsley, chopped (about 1 tbsp)​

For Garnish:

• 5 hard-boiled eggs, sliced

• Additional parsley for decoration​
