Instructions:

  1. Prep the veggies: Grate and squeeze excess water from the vegetables (especially zucchini and potatoes).

  2. Mix: In a bowl, combine grated veggies, onion, garlic, eggs, breadcrumbs, flour, cheese, and spices. Mix until well combined.

  3. Form cakes: Shape the mixture into small patties.

  4. Cook:

    • Pan-fry: Heat oil in a skillet over medium heat. Fry each patty for 3–4 minutes per side until golden brown.

    • Bake (healthier): Preheat oven to 400°F (200°C). Place patties on a lined baking sheet, lightly brush with oil, and bake for 20 minutes, flipping halfway.

  5. Serve: Hot, with yogurt dip, sour cream, or a simple salad.
