Instructions:

Prepare the bread:

Cut a square or rectangle hole in the center of each bread slice using a knife (save the cut-outs).

Make the egg mixture:

In a bowl, beat the eggs with milk.

Add chopped vegetables, cheese, salt, and pepper. Mix well.

Assemble the frittata toast:

Heat a non-stick pan over medium heat and grease it with butter or oil.

Place the hollowed bread slices on the pan.

Pour a spoonful of the egg mixture into the center hole of each slice.

Cover with a lid and cook for about 3–4 minutes, until the egg is set and the bottom is golden.

Flip (optional):

If you prefer it cooked on both sides, gently flip and cook for 1–2 more minutes.

Toast the cut-outs:

Toast the removed bread centers in the pan until golden and use them as dippers!

Serve hot:

Garnish with fresh herbs or a dash of hot sauce, if desired.
