Ingredients (serves 6)

For the pastry:

  • 2 sheets of ready-rolled puff pastry

  • Powdered sugar (for dusting)

For the ricotta filling:

  • 400g (14 oz) ricotta cheese (well-drained)

  • 100g (1/2 cup) granulated sugar

  • 1 tsp vanilla extract or lemon zest (optional)

  • 200ml (3/4 cup) whipping cream (cold)

For decoration:

  • Fresh berries or fruit (optional)

  • Powdered sugar or cocoa for dusting

  • Dark chocolate shavings or drizzle (optional)
