How to Make Pineapple Cakes:
Preheat the oven to 180°C (350°F) and grease six 11cm (4-inch) tart pans.
In a large mixing bowl, whisk together the eggs, sugar, and vanilla extract.
Add the vegetable oil and yogurt to the egg mixture.
Sift the all-purpose flour, cornstarch, and baking powder into the wet ingredients.
Whisk the wet and dry ingredients together until smooth.
Transfer the batter to a piping bag and pipe it into the prepared tart pans.
Top each cake with a slice of canned pineapple.
Bake for 25 minutes, or until golden and a skewer inserted into the center comes out clean.
Dust with powdered sugar before serving.
