Instructions

  1. Prep the Squash
    Grate the squash and squeeze out as much liquid as possible using a clean kitchen towel or cheesecloth.

  2. Make the Batter
    In a large bowl, whisk together the eggs, salt, pepper, olive oil, Parmesan cheese, water, and flour until well combined.

  3. Add the Squash
    Stir the grated squash into the batter until evenly mixed.

  4. Add Baking Powder
    Sprinkle in the baking powder and stir until the batter is thick and cohesive.

  5. Fry the Fritters
    Heat vegetable oil in a pan over medium heat. Drop spoonfuls of batter into the hot oil and fry for about 5 minutes, turning occasionally, until golden brown and crispy.

  6. Serve
    Remove the fritters and drain on paper towels. Serve hot—ideally with a dipping sauce or a dollop of sour cream!
