Instructions:

  1. Preheat your oven to 425°F (220°C). Lightly flour a baking sheet or line it with parchment paper.

  2. Mix dry ingredients: In a large bowl, whisk together flour, baking soda, and salt. Add sugar and raisins if using.

  3. Add buttermilk: Make a well in the center and pour in the buttermilk. Stir until a shaggy dough forms. Don’t overmix.

  4. Shape the dough: Turn it onto a floured surface and gently bring it together into a round loaf. Pat it down slightly (about 2 inches thick).

  5. Score the top: Use a sharp knife to cut a deep “X” on top. This helps it bake evenly and is said to “let the fairies out” in Irish tradition ☘️

  6. Bake: Place the loaf on the baking sheet and bake for 35–45 minutes, or until golden brown and it sounds hollow when tapped on the bottom.

  7. Cool on a wire rack before slicing.
