Mediterranean Chocolate Chip Semifreddo

A creamy, frozen Italian-style dessert — light, smooth, and filled with chocolate chips. This Mediterranean classic combines the richness of custard with the coolness of ice cream, perfect for warm days or an elegant ending to a meal.



Ingredients



For the custard base:

4 large egg yolks

1/2 cup sugar

1 cup heavy cream

1/2 cup whole milk

1 tsp pure vanilla extract

1/2 cup mini dark chocolate chips

Optional Mediterranean touch:

1 tbsp orange zest or 1 tsp orange blossom water

A drizzle of honey before serving



Instructions



Prepare the custard:
In a heatproof bowl, whisk the egg yolks and sugar together until pale and creamy.
In a saucepan, warm the milk and cream over low heat until just steaming — do not boil.
Slowly pour the hot milk mixture into the egg yolks, whisking constantly to prevent curdling.

Cook until thickened:
Return the mixture to the saucepan and cook gently over low heat, stirring constantly, until it coats the back of a spoon.
Remove from heat, stir in vanilla (and orange zest if using), and let it cool completely.

Whip and fold:
Once cooled, whip the remaining cream to soft peaks.
Gently fold the whipped cream and chocolate chips into the custard mixture.

Freeze:
Pour the mixture into a glass or metal container. Cover and freeze for at least 6 hours, or overnight, until firm but scoopable.

Serve:
Scoop into bowls or slice if frozen in a loaf pan. Drizzle with honey or garnish with crushed pistachios for a Mediterranean touch.
