Ingredients
For the Muffins:
1½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
½ cup olive oil (or light vegetable oil)
½ cup honey or sugar
2 large eggs
1 teaspoon vanilla extract
¾ cup plain Greek yogurt
Zest of 1 lemon
For the Yogurt Swirl Mixture:
½ cup Greek yogurt
2 tablespoons honey
1 teaspoon lemon juice
Instructions
Prepare the Batter
In a bowl, whisk together the flour, baking powder, baking soda, and salt.
In another bowl, beat olive oil, honey (or sugar), eggs, and vanilla until smooth. Add Greek yogurt and lemon zest, mixing until well combined.
Gradually add the dry ingredients to the wet mixture and stir until just combined. Don’t overmix.
Prepare the Yogurt Swirl
In a small bowl, mix the Greek yogurt, honey, and lemon juice until creamy.
Assemble the Muffins
Line a muffin tin with paper cups. Fill each cup two-thirds full with the muffin batter. Add a small spoonful of the yogurt mixture on top and swirl gently using a toothpick or knife to create a marble pattern.
Bake
Preheat oven to 350°F (180°C). Bake for 18–20 minutes, or until a toothpick inserted in the center comes out clean. Let them cool on a rack.
Serve
Enjoy them warm or at room temperature. They’re light, tangy, and perfect with tea or coffee.
Serving Suggestion
Dust lightly with powdered sugar or drizzle with a touch of honey before serving. These muffins pair beautifully with fresh fruit or a cup of mint tea.
