Place the sliced apples in a bowl.
Add lemon juice, 2 tablespoons sugar, and cinnamon.
Mix well and set aside for 10 minutes to soften and release juices.

In a mixing bowl, beat the eggs with sugar until light and slightly fluffy.
Add milk, oil, and vanilla extract. Mix until smooth.
