Ingredients

1 lb (450 g) ground beef

1 tablespoon olive oil (if needed)

1 small onion, finely diced

2 cloves garlic, minced

1 packet taco seasoning (keto-friendly)

4 cups beef broth

1 (10 oz) can diced tomatoes with green chilies

4 oz (115 g) cream cheese, softened

1½ cups shredded cheddar cheese

½ cup heavy cream

Salt and pepper, to taste

Instructions

In a large pot, cook ground beef over medium heat until browned. Drain excess grease if needed.

Add onion and garlic; cook for 2–3 minutes until softened.

Stir in taco seasoning, beef broth, and diced tomatoes. Bring to a gentle simmer.

Reduce heat to low and add cream cheese, stirring until fully melted and smooth.

Pour in heavy cream and shredded cheddar, stirring until cheese is melted.
