Cherry Mash Truffles
A sweet and nostalgic treat made with creamy cherry centers coated in rich chocolate. These Cherry Mash Truffles are perfect for holidays, gifting, or anytime you want a bite-size dessert with classic cherry flavor.
Ingredients
Cherry Filling

1 cup maraschino cherries, finely chopped

3 tablespoons cherry juice (from the jar)

2 tablespoons unsalted butter, softened

2½ cups powdered sugar

½ teaspoon almond extract (optional)
Chocolate Coating

2 cups milk or dark chocolate chips

1 tablespoon coconut oil or shortening
Optional Topping

Finely chopped peanuts or sprinkles
Instructions

Drain cherries well, reserving some juice. Finely chop and pat dry with paper towels.

In a bowl, mix butter, cherry juice, and almond extract until smooth.

Gradually stir in powdered sugar until a thick dough forms. Fold in chopped cherries.

Roll mixture into small balls and place on a lined baking sheet. Chill for 30–45 minutes until firm.

Melt chocolate chips with coconut oil in a microwave or double boiler, stirring until smooth.

Dip chilled truffles into melted chocolate, coating completely.

Place back on the lined sheet and sprinkle with chopped peanuts if desired.

Refrigerate until chocolate is set. Store chilled.
