Crispy Reuben Roll-Ups

Golden and crunchy on the outside with a warm, melty Reuben-style filling inside. These Crispy Reuben Roll-Ups are perfect as an appetizer, snack, or fun twist on the classic sandwich.

Ingredients

  • 8 egg roll wrappers

  • 1½ cups corned beef, finely chopped

  • 1 cup sauerkraut, well drained

  • 1 cup shredded Swiss cheese

  • ½ cup Thousand Island dressing

  • Oil, for frying

Optional for Serving

  • Extra Thousand Island or Russian dressing

  • Pickle spears


Instructions

  1. Place an egg roll wrapper on a clean surface with one corner pointing toward you.

  2. Add corned beef, sauerkraut, Swiss cheese, and a spoonful of Thousand Island dressing to the center.

  3. Fold the bottom corner over the filling, fold in the sides, and roll tightly. Seal the edge with a little water.

  4. Heat oil in a deep skillet to 350°F (175°C).

  5. Fry roll-ups in batches for 2–3 minutes per side, until golden brown and crispy.

  6. Remove and drain on paper towels.

  7. Serve hot with extra dressing and pickles.
