Crispy Reuben Roll-Ups
Golden and crunchy on the outside with a warm, melty Reuben-style filling inside. These Crispy Reuben Roll-Ups are perfect as an appetizer, snack, or fun twist on the classic sandwich.
Ingredients

8 egg roll wrappers

1½ cups corned beef, finely chopped

1 cup sauerkraut, well drained

1 cup shredded Swiss cheese
-
½ cup Thousand Island dressing

Oil, for frying
Optional for Serving

Extra Thousand Island or Russian dressing

Pickle spears
Instructions

Place an egg roll wrapper on a clean surface with one corner pointing toward you.

Add corned beef, sauerkraut, Swiss cheese, and a spoonful of Thousand Island dressing to the center.

Fold the bottom corner over the filling, fold in the sides, and roll tightly. Seal the edge with a little water.

Heat oil in a deep skillet to 350°F (175°C).

Fry roll-ups in batches for 2–3 minutes per side, until golden brown and crispy.

Remove and drain on paper towels.

Serve hot with extra dressing and pickles.
