Mini Pecan Pies

Sweet, gooey, and perfectly portioned, these Mini Pecan Pies have all the rich flavor of a classic pecan pie in bite-size form. They’re ideal for holidays, parties, or dessert trays.

Ingredients

Crust

  • 1 package refrigerated pie crusts

  • Flour, for rolling

Filling

  • 1 cup chopped pecans

  • ½ cup light corn syrup

  • ½ cup brown sugar

  • 2 tablespoons unsalted butter, melted

  • 1 large egg

  • 1 teaspoon vanilla extract

  • ¼ teaspoon salt


Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a muffin tin.

  2. Roll out pie crust and cut into circles large enough to fit the muffin cups. Press gently into each cup.

  3. In a bowl, whisk corn syrup, brown sugar, melted butter, egg, vanilla, and salt until smooth.

  4. Stir in chopped pecans.

  5. Spoon filling evenly into each crust (do not overfill).

  6. Bake for 20–25 minutes, until set and lightly golden.

  7. Cool in the pan for 10 minutes, then remove and cool completely.
