Peach Cobbler Pound Cake

A rich, buttery pound cake filled with sweet peaches and warm cinnamon flavor, finished with a soft cobbler-style topping. This dessert combines the comfort of peach cobbler with the dense, moist texture of a classic pound cake.

Ingredients

Cake

  • 1 cup unsalted butter, softened

  • 2 cups granulated sugar

  • 4 large eggs

  • 1 teaspoon vanilla extract

  • 3 cups all-purpose flour

  • ½ teaspoon baking powder

  • ½ teaspoon salt

  • 1 cup sour cream

  • 1½ cups diced peaches (fresh or canned, well drained)

Cobbler Topping

  • ½ cup brown sugar

  • 1 teaspoon ground cinnamon

  • ¼ teaspoon nutmeg (optional)

  • 2 tablespoons melted butter

Optional Glaze

  • ½ cup powdered sugar

  • 1–2 tablespoons milk or cream

  • ¼ teaspoon vanilla extract


Instructions

  1. Preheat oven to 325°F (165°C). Grease and flour a bundt or loaf pan.

  2. Cream butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each. Stir in vanilla.

  3. In a separate bowl, whisk flour, baking powder, and salt.

  4. Mix dry ingredients into the batter alternately with sour cream, beginning and ending with flour.

  5. Gently fold in the diced peaches.

  6. Pour batter into the prepared pan and smooth the top.

  7. In a small bowl, mix brown sugar, cinnamon, nutmeg, and melted butter. Sprinkle evenly over the batter.

  8. Bake for 75–85 minutes, or until a toothpick inserted comes out clean.

  9. Cool in the pan for 15 minutes, then turn out onto a wire rack to cool completely.

  10. Drizzle with glaze if desired before serving.
