Pickled Red Onions
Bright, tangy, and crisp, pickled red onions are an easy way to add bold flavor and color to tacos, sandwiches, salads, and bowls. They’re quick to make and ready in minutes.
Ingredients

1 large red onion, thinly sliced

1 cup apple cider vinegar (or white vinegar)

1 cup water

1 tablespoon sugar

1½ teaspoons salt
Optional Flavor Add-Ins

1 garlic clove

½ teaspoon peppercorns
-
1 bay leaf

A pinch of red pepper flakes
Instructions

Place sliced red onions in a heat-safe jar or bowl.

In a saucepan, combine vinegar, water, sugar, salt, and any optional add-ins.

Bring mixture to a simmer, stirring until sugar and salt dissolve.

Pour hot brine over the onions, making sure they’re fully submerged.

Let cool at room temperature for about 30 minutes.

Cover and refrigerate. Onions are ready to use and get better after a few hours.
