Pineapple Chicken and Rice

Ingredients

1 lb (450 g) chicken breast, cut into bite-size pieces

2 tablespoons olive oil

Salt and black pepper, to taste

1 cup uncooked long-grain rice

2 cups chicken broth

1 cup pineapple chunks (fresh or canned, drained)

½ cup pineapple juice

¼ cup soy sauce

2 tablespoons brown sugar

1 teaspoon garlic powder

½ teaspoon ground ginger

1 tablespoon cornstarch + 2 tablespoons water (optional, for thicker sauce)

Green onions (optional, for garnish)
Instructions

Heat olive oil in a large skillet or pot over medium heat.

Season chicken with salt and pepper and cook until lightly browned.

Stir in rice, chicken broth, pineapple chunks, pineapple juice, soy sauce, brown sugar, garlic powder, and ginger.

Bring to a gentle boil, then reduce heat to low, cover, and simmer for 18–20 minutes, until rice is tender and chicken is cooked through.

If a thicker sauce is desired, stir in cornstarch slurry and cook 2–3 more minutes.
