Pistachio Cookies
Soft, buttery cookies with a light crunch from chopped pistachios and a hint of vanilla. These pistachio cookies are easy to make and perfect for holidays, tea time, or anytime you want a not-too-sweet treat.
Ingredients

1 cup unsalted butter, softened

¾ cup granulated sugar

¼ cup brown sugar

1 large egg

1 teaspoon vanilla extract

2 cups all-purpose flour

½ teaspoon baking soda

¼ teaspoon salt

1 cup shelled pistachios, roughly chopped

½ cup white chocolate chips (optional)
Instructions

Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

Cream butter, granulated sugar, and brown sugar until light and fluffy.

Beat in egg and vanilla extract.

In a separate bowl, whisk flour, baking soda, and salt.

Gradually mix dry ingredients into the wet ingredients until combined.

Fold in chopped pistachios and white chocolate chips if using.

Scoop dough onto the prepared baking sheet, spacing about 2 inches apart.

Bake for 10–12 minutes, until edges are lightly golden.

Cool on the baking sheet for 5 minutes, then transfer to a wire rack.
