Roasted Garlic Butter Parmesan Potatoes
Crispy on the outside and tender on the inside, these roasted potatoes are tossed in garlic butter and finished with Parmesan for a rich, savory flavor. They’re the perfect side dish for almost any meal.
Ingredients

2 lbs (900 g) baby potatoes, halved

3 tablespoons unsalted butter, melted

2 tablespoons olive oil

4 cloves garlic, minced

½ cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and black pepper, to taste

Fresh parsley, chopped (optional)
Instructions

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

In a large bowl, combine melted butter, olive oil, garlic, Italian seasoning, salt, and pepper.

Add potatoes and toss until evenly coated.

Spread potatoes in a single layer on the baking sheet, cut-side down.

Roast for 25–30 minutes, then flip potatoes.

Sprinkle Parmesan evenly over the potatoes and return to the oven.

Roast another 10–15 minutes, until golden and crispy.
