Slow Cooker Banana Foster Pudding is warm, buttery, sweet, and irresistibly comforting. Inspired by the classic Bananas Foster dessert, this slow-cooked version combines caramelized banana flavor with a soft, bread-pudding–like texture. It’s an easy set-and-forget recipe perfect for family gatherings, holidays, or cozy evenings when you want a dessert that practically cooks itself.

Serve it warm with ice cream or whipped cream and enjoy the rich banana-caramel goodness in every spoonful.

Ingredients

  • 1 cup granulated sugar

  • 1 cup packed brown sugar

  • 1 cup unsalted butter, melted

  • 3 large eggs, beaten

  • 1 teaspoon vanilla extract

  • 1 teaspoon ground cinnamon

  • ¼ teaspoon ground nutmeg (optional)

  • 1½ cups all-purpose flour

  • 1 teaspoon baking powder

  • ½ teaspoon salt

  • 2 cups whole milk

  • 4 medium bananas, sliced into coins

  • Optional: vanilla ice cream or whipped cream for serving

Instructions

Step 1: Prepare the Slow Cooker
Grease a 4–6 quart slow cooker with butter or nonstick spray to prevent sticking.

Step 2: Mix the Batter
In a large bowl, whisk together the granulated sugar, brown sugar, and melted butter until smooth.
Stir in the beaten eggs and vanilla extract.
In a second bowl, sift together the flour, baking powder, salt, cinnamon, and nutmeg.
Gradually add the dry ingredients to the wet mixture, alternately adding the milk, mixing until the batter becomes smooth.

Step 3: Layer the Ingredients
Spread half of the batter into the bottom of the slow cooker.
Arrange half of the banana slices on top.
Pour the remaining batter evenly over the bananas.
Top with the rest of the banana slices, pressing them slightly into the batter.

Step 4: Cook the Pudding
Cover and cook on LOW for 3–4 hours, or until the center is set and a toothpick inserted comes out clean or slightly moist.
Avoid lifting the lid while it cooks to maintain even heat.

Step 5: Serve
Let the pudding cool for 10–15 minutes.
Scoop warm servings into bowls and top with ice cream or whipped cream.
For extra indulgence, drizzle with caramel sauce or sprinkle cinnamon on top.

Tips for Success

  • Bananas: Use ripe but firm bananas—overripe bananas may turn mushy.

  • Add-ins: Stir in ½ cup pecans or walnuts for added crunch. For an adults-only version, drizzle a splash of rum or bourbon over the bananas.

  • Storage: Store leftovers in the refrigerator for up to 3 days. Reheat in the microwave until warm.
